Directions
In a bowl, stir together the garbanzo flour, water, and salt into a smooth paste.
In a non-stick pan, melt coconut oil over medium heat; pour in the batter, tilting the pan so the batter spreads evenly over the pan.
Cook for about 7 minutes or until slightly browned and flip the pancake to cook the other side.
Repeat with the remaining batter.
Healthy Amaranth Porridge

Ingredients
- 1 cup of amaranth
- 1 tbsp. coconut oil
- ½ inch fresh ginger, julienned
- ½ tsp. mustard seeds
- ½ tsp. cumin
- 4 cups of filtered water
- 1 tsp. dry turmeric
- ½ tsp. apple cider vinegar
- 1 tbsp. raw unsalted butter
- ½ tsp. sea salt
- a handful of raw pumpkin seeds
Directions
Melt coconut oil in a heavy-bottom pan; stir in ginger, cumin, and mustard seeds and cook until mustard seeds start popping; stir in water, amaranth, and salt.
Bring the mixture to a gentle boil; lower heat to medium-low and cook for about 30 minutes or until thick and creamy.
Remove from heat and then stir in apple cider vinegar, turmeric, and butter.
Serve the porridge sprinkled with pumpkin seeds.
THYROID-HEALING LUNCH RECIPES
Tasty Prebiotic Potato Salad
Yield: 8-10 Servings

Ingredients
- 2 pound red potatoes with skins on
- 4 bacon strips
- ¼ cup chopped spring onions
- 2 tbsp. apple cider vinegar
- ¾ cup sauerkraut, chopped
- 2 tbsp. Dijon mustard
- ¾ cup mayo
- 1 tbsp. sea salt
Directions
Preheat your oven to 350°F.
In a pan of salted water, boil the potatoes with skins on for about 45 minutes or until tender.
Arrange bacon strips on the baking sheet and bake for about 45 minutes or until browned.
Remove the cooked potatoes from cooking water and let them cool completely; chop into 1-inch cubes and stir in the remaining ingredients. Fold until well combined and serve
Warming Quinoa Salad

Ingredients
- 1 cup quinoa
- 2 cups chopped cucumbers
- 1 cup watercress
- 1 cup sliced fruit (grapes, apples, and strawberries)

For the dressing:
- 1 tbsp. apple cider vinegar
- 2 tbsp. extra virgin olive oil

Directions
Cook quinoa according to package instructions; remove from heat and let cool.
In a large bowl, combine cooked quinoa, greens, chopped cucumber, fruit and herbs in a large bowl.
In a small jar, combine the dressing ingredients and shake to mix well; pour the dressing over the quinoa salad and toss until well combined. Top the salad with nuts and serve.
THYROID-HEALING DINNER RECIPE
Shrimp Saganaki

Ingredients
- 1 tbsp. coconut oil
- 1/4 pound shrimp
- 1/4 cup chopped onion
- 1 clove garlic, chopped
- 1/4 tsp. red pepper flakes
- 1/4 tsp. oregano
- 1/2 cup chopped tomato
- 1 handful parsley, chopped
- salt and pepper
- 1/2 cup feta, crumbled
Directions
Preheat your oven to 425°F.
In a pan, heat oil and add the onion; sauté for about 5 minutes or until tender.
Stir in garlic and red pepper flakes and continue sautéing for 30 seconds more.
Stir in oregano and tomato and simmer for about 5 minutes or until the sauce is thick, add shrimp and continue simmering for 30 seconds more.
Remove from heat, stir in chopped parsley and transfer to a baking dish; top with cheese and bake for about 10 minutes or until the sauce is bubbly.

Orange Creamsicles

- 1 cup fresh orange juice
- ¼ tsp. orange extract
- 3 tbsp. raw honey
- 1 cup heavy cream
- ½ tsp. vanilla extract
Directions
Whisk all ingredients in a bowl until well blended; pour into the popsicle molds and let sit for at least 30 minutes. Insert popsicle sticks and freeze for about 4 hours or until frozen.
When ready, run warm water around the molds to loosen the popsicles. Serve right away!
Grapefruit-Goji Smoothie

- ½ grapefruit
- Handful dry goji berries
- Handful walnut, pecans, or almonds
- 1.5 tbsp. ground flax seed

Directions
Soak goji berries for at least 2 hours.
When ready, combine all ingredients in a blender and blend until very smooth. Enjoy!
